I took a chance on getting the #picanha at WildFork , not sure how it’d go. The attendant sold me on the details & how to prepare it.
Omg… FTR¿ On the other side of first taste? the word that comes to mind is succulence. & it’s so easy.
I just put some good salt on it and let it come to room temperature…& it was perfect.
(But back to the inspo, day of~)
Then he was like “& some chimichurri would be perfect-” I’d asked if they had any& he happily showed me a mix… but then I was like “Wait- exactly what’s IN it?” & he sagely gave me the traditional DL.
I was like “Well, I can riff on that~” & was off to the farmer’s market on the way back up into the canyon.
I just… fell so in love with the other herbs that my mehness on parsley (outside of smoothies- it’s wonderful in smoothies) won over, and…I f ureaking Love cilantro, so~ here we …Are.
And I am telling you~this borderline blasphemous chimichurri for team cilantro …is about to be on everything until it’s gone! & then I’m going to make some more. Again & again.
